Degustazione : The Vetri Tasting Menu
To fully experience Vetri restaurant, you must reserve a table for the chef’s grand tasting menu on Friday and Saturday night. On these special evenings, Marc Vetri creates new dishes inspired by the freshest seasonal ingredients from local food producers. The chef then hand-paints an original menu for each table in the restaurant. These beautiful menus lead Vetri’s guests on a culinary journey known in Italy as “degustazione” (DAY-guh-statz-ee-OH-neh) or, simply, tasting.

“To me,” says Vetri, “the essence of degustazione is putting your trust in the able hands of your hosts. It’s like going to someone’s house for dinner.” These extraordinary dinners feature a number of courses in a relaxed succession of dishes brought to the table. Each dish is designed to expose you to new foods or new preparations to delight and surprise you while developing your sense of taste. At the start of the evening, the educated staff serves as culinary guide, assisting you in hand-crafting a tasting menu that suits your particular food and wine preferences.

These tasting menus have been described as a “symphony of flavors and textures”—from the outstanding food, prepared to order, to the wine service provided by Jeff Benjamin and his skilled team of servers. The Degustazione and its distinctive brand of hospitality have become the Vetri trademark.
